Eat Right, Choose Wise! Can Smart Restaurant Change the Trend of F&B Industry? |

Abstract
This research investigates the use of a smart restaurant, by applying the Analytical Hierarchy Process (AHP) approach to determine the key success factors for its management. In the era of booming information technology, many traditional enterprises are facing the problem of enterprise transformation such as restaurants, and most of the food and beverage (F&B) industry relies on a large amount of manpower to operate restaurants. Therefore, they face the problem of increasing labor costs, which has spurred the arrival of the era of robots to this sector. A smart restaurant is an intelligent management system tailored for F&B restaurant based on the Internet of Things (IoT) and cloud computing technology. The customers’ ordering system, service call system, kitchen interaction system, front desk cash register system, reservation system, and information management system can significantly reduce the number of employees, cut operating costs, and improve management performance. Therefore, this study explores the key success factors associated with the operation of smart restaurants, which include product strategy, marketing services, modernization of the management system, and image of the store, which have become code words for smart restaurants to target. This study aims to develop a comprehensive research framework to identify the success factors of a smart restaurant in order to give ground for its implementation and performance measurement.
